Chef Tom Colicchio and Crafted Hospitality open Fowler & Wells in The Beekman, a new hotel and residence in a one-of-a-kind 1883 landmark building in lower Manhattan.

The menu reflects a decidedly American culinary sensibility, calling to mind classic New York dishes from the 19th and 20th centuries, prepared in modern iterations. Influenced by New York’s original fine dining restaurants and the restaurant’s location in the 19th century landmark building, Colicchio and executive chef Bryan Hunt will integrate flavors and cooking techniques from across the world, with a New York twist. The name of the restaurant pays homage to an original tenant of The Beekman site, circa 1840: Fowler & Wells Phrenological Cabinet. During the 19th century, phrenology was a popular pseudoscience that believed a person's abilities or personality traits could be determined by measurements of the human skull.

Alongside Fowler & Wells, Colicchio and team will operate The Bar Room, the hotel bar located in the building’s stunning, nine-story Victorian atrium. The cocktail list will feature hand-crafted variations on classic cocktails. Colicchio and the Crafted Hospitality team will also oversee all private dining at The Beekman, offering guests distinct, customizable menus.
